THE STEELPORT 6” BONING KNIFE STANDS OUT FOR SEVERAL REASONS:

  • This heirloom blade is slightly wider than an average boning knife, allowing for more sharpenings during its expected longer blade life, while still being narrow enough to be nimble and perform fine detailed work.

  • The safety guard at the bolster is extra wide for additional protection and control, preventing injury especially if hands are wet or greasy from breaking down large cuts.

  • The handle is the same shape and size as the award-winning STEELPORT Chef Knife’s contoured handle, providing more comfort, safety, and stability.

It is handcrafted in our factory in Portland using all of the same US-sourced materials and proprietary methods as the rest of our award-winning lineup of cutlery. As such, it is the only Boning Knife on the market with the prized custom features we apply to all STEELPORT knives, including a differential heat treatment.

The Boning Knife is a natural extension of the STEELPORT core line of cutlery, and complements the STEELPORT Chef Knife, Paring Knife, Serrated Knife, and Slicing Knife.

 

BLADE SHAPE

A Boning Knife is thin with an agile tip, perfect for breaking down or cleaning up meat. This shape is similar to a filet knife, and sometimes referred to as a meat knife or de-boning knife, specially designed for precisely trimming meat from bones, separating ligaments, and removing meat from fat. It should have a safety guard at the bolster which prevents the hand from slipping when maneuvering through tight sections of meat and bone, with potentially greasy or wet hands/handle.

The STEELPORT 6” Boning Knife has a slightly wider blade than average, allowing for more sharpenings and longer blade life (combined with our already longer lasting edge), while still being narrow enough to be nimble and perform fine detailed work. Delivering an heirloom knife requires us to think through its functionality for decades to come.

We’ve also designed the STEELPORT Boning Knife to have an especially wide guard at the bolster for additional safety and mobility.

This knife is optimized for a particular use. For example the addition of the safety guard means the blade does not make full contact with the cutting board, so this style knife is best used in addition to (not as a replacement for) a Chef Knife and Paring Knife.

Like all STEELPORT Knives, all the surfaces are rounded to ensure a comfortable soft feel for long-term comfort, including at the bolster and spine.

 

BLADE MATERIAL/HEAT TREAT

STEELPORT knives have solid one-piece traditional drop forged construction from blade tip to end cap with an integral bolster for a well-balanced and long-lasting knife. Through STEELPORT’s proprietary differential heat treatment, American 52100 Carbon Steel achieves an unmatched 65HRC hardness at the blade for exceptional long-lasting sharpness, while maintaining a softer 30HRC spine for lifelong durability.

The bolster and spine are hand-polished smooth for comfort.

 

HANDLE

The handle of the STEELPORT 6” Boning Knife is the same shape and size as the award-winning STEELPORT Chef Knife’s contoured handle. This means it is larger than average for this type of knife, and, along with the wider guard on the bolster, it provides more comfort, safety, and stability.

STEELPORT handles are contoured to accommodate any hand size. Our handles are made from beautiful Oregon Big Leaf Maple Burl, a locally sourced, naturally unique burl wood.

We also stabilize the handle wood with resin to meet tough kitchen requirements so they won’t shrink or swell - our knives have a Lifetime Warranty, so we’ve worked to ensure the handles will last as long as the blade.

 

CARE & USE

Carbon Steel is for those who take pride in keeping their tools at peak performance through basic maintenance. Carbon Steel knives like STEELPORT are not stain or rust resistant. Day to day, it is as simple as remembering to hand wash and dry after each use.
